Ingredients

  • 1 to 2 large cedar grilling planks
  • Aioli
    • 1/2 cup mayonnaise
    • 2 teaspoons white wine vinegar
    • 1 clove garlic, grated
    • 3/4 teaspoon smoked paprika
    Fish
    • 1 tablespoon chopped parsley
    • 2 teaspoons olive oil
    • 1 teaspoon chopped garlic
    • 1/2 teaspoon salt
    • 1/4 teaspoon coarsely ground black pepper
    • 2 pounds cod or haddock (1 large or 2 small pieces)

Directions

  1. Soak cedar planks in warm water for 1 to 2 hours.
Aioli
  1. Meanwhile, in a small bowl, whisk all ingredients. Cover with plastic.
Fish
  1. In a small bowl, combine first 5 ingredients. Spread on fish.
  2. Heat grill to medium-high. Remove planks from water and pat dry. Char one side of plank for 2 minutes. Flip and add fish. Cover grill and cook 15 to 20 minutes, until fish is opaque and flakes easily with a fork. Serve with aioli on the side.
