Ingredients

  • 3 tablespoons unsalted butter
  • 1 large onion, diced
  • 2 large carrots, peeled and diced
  • 2 ribs celery, diced
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 cloves garlic, sliced
  • 1/2 cup all-purpose flour
  • 1 box (32 oz) seafood stock
  • 3 cups whole milk
  • 1 1/4 pounds russet potatoes, peeled and diced
  • 3 sprigs fresh thyme, plus more for garnish (optional)
  • 1 1/2-1 3/4 pounds skinless cod fillet, cut into 1-inch pieces

Directions

  1. Heat butter in a large stockpot over medium. Add onion, carrots, celery, salt and pepper and cook, stirring occasionally, 5 minutes.
  2. Stir in garlic and cook 2 minutes. Sprinkle with flour and cook 1 minute.
  3. Whisk in stock and milk. Stir in potatoes and thyme sprigs. Increase heat to medium-high and bring to a boil. Reduce to medium-low and simmer 10 minutes. Stir in cod, cover and cook 5 minutes, until fish is opaque. Remove thyme stems and serve.
