Grapefruit Margarita Granita

- Peel and section 3 red grapefruit. Add to a food processor along with 2 cups grapefruit juice, 1/3 cup tequila, zest and juice of 1 lime and 1 cup simple syrup (see Note, below). Process until smooth. Pour into a freezer-safe shallow dish and freeze 6 hours, stirring from the center outward every hour. Place in food processor and pulse 5 seconds. Serve with a sprig of fresh mint.
- Simple syrup? Simple. Combine 1 cup each water and sugar in a small saucepan. Bring to a boil and stir until sugar dissolves. Let cool.
