Simple Sugar Cookies
- Yield: 3 dozen
- Prep: 15 mins
- Chill: 4 hrs
- Bake: 12 mins at 350°F
(1 stick) unsalted butter, softened
Royal Icing, silver or white luster dust, nonpareils and coarse sugar
- In a medium bowl, whisk flour, baking powder and salt. Set aside.
- In a large bowl, beat butter and sugar until smooth, about 2 minutes. Beat in egg and vanilla. On low speed, beat in flour mixture until just combined. Divide dough in half and form each half into a disk. Wrap in plastic wrap and refrigerate 4 hours or overnight.
- Heat oven to 350 degrees . On a lightly floured surface, roll out one disk to 1/4-inch thickness. Using a 3 1/4-inch round cookie cutter (for snowmen) or 3 1/2-, 2- and 1 3/4-inch star cookie cutters, cut out shapes. Place on an ungreased baking sheet. Bake at 350 degrees for 10 to 12 minutes, until lightly golden around edges. Remove cookies to wire racks to cool completely.
- Repeat with remaining half of dough. Gather scraps and refrigerate. Re-roll and cut into additional shapes. Bake and cool on wire racks; decorate as desired. For stars, once base frosting is dry, brush with luster dust. For snowmen, add hat and face embellishments after base coat has dried completely. When dry, store in an airtight container up to 2 weeks.
