  1. 1 of 1 In a skillet, heat 1 tbsp extra-virgin olive oil over medium-high. Stir in 1/2 lb ground beef, 1/4 cup finely chopped red onion, 2 chopped cloves garlic, 2 tsp chili powder, 1/2 tsp ground cumin and 1/4 tsp salt. Cook 5 minutes. Stir in 1 diced vine tomato and 1/2 cup chopped cilantro. Scoop into 4 halved, pitted and peeled avocados. Top with sour cream, shredded Mexican cheese and more cilantro.
