golden potatoes (unpeeled and scrubbed)
yellow sweet pepper
(1.25-ounces packet) taco seasoning
- Heat oven to 400 degrees F. Cut golden potatoes (unpeeled and scrubbed) into 1-inch pieces. Toss in a large bowl with peppers, cored and cut into pieces, olive oil, taco seasoning and oregano. Spread onto large rimmed baking sheet. Roast at 400 degrees F for 35 minutes, until tender.
