  1. 1 of 4 Cook the pasta in a large pot of boiling water according to package directions. Drain, reserving 1/2 cup of the pasta cooking water.
  2. 2 of 4 Meanwhile, slice the chicken into 2 x 1/2-inch strips. Heat the oil in a large skillet over medium-high heat. Add the chicken; saute for 5 minutes or until it begins to brown. Add the onion; cook for 3 minutes. Add the garlic and cumin. Reduce the heat to medium; cook for 1 minute.
  3. 3 of 4 Add the chipotle peppers, diced tomatoes, heavy cream, salt and pepper. Reduce heat to low; simmer for 5 minutes. Add cilantro.
  4. 4 of 4 Add pasta to sauce. Stir in reserved pasta water as needed for creamier consistency. Serve. Makes 6 servings.
