How to Make the Perfect Eggs

Follow our super-simple instructions on this breakfast powerhouse, whether you want them fried, poached or hard-boiled. Order up!

The Perfect Poached Egg

1 Bring a medium pot of water to a simmer, adding a splash of white vinegar.

2 One at a time, crack eggs into a small dish and slide egg into water.

Poach in simmering water for 3 to 4 minutes or to desired doneness, then remove to paper towels with a slotted spoon.

Add 2 tbsp butter to a nonstick skillet and crack in 2 eggs.

Fry over medium for 3 to 4 minutes, until whites are set. Sprinkle with salt and pepper.

If you would like your eggs over-easy, gently flip, cook 1 minute and remove from heat.

Hard Boiled

Place desired amount of eggs in a medium saucepan and add enough water to cover by 1 inch.

Heat over medium just until simmering.

Reduce heat to maintain a simmer and cook for 8 to 10 minutes (go with the shorter time for softer centers, the longer range for firm centers).

Drain and transfer to an ice bath—this stops the cooking and makes the eggs easier to peel.
